En aquesta granja es conreen m\u00faltiples varietats com Java, Pink Bourbon, Geisha, Pacamara, Caturra, Tabi, Castillo o Col\u00f2mbia, utilitzant sistemes avan\u00e7ats com a cultius en terrasses, reg per degoteig, maneig controlat d&#8217;ombra i c\u00e0lculs nutricionals realitzats en laboratori. <\/p>\n<p>Un dels aspectes m\u00e9s distintius de la finca \u00e9s la seva infraestructura tecnol\u00f2gica: compta amb laboratori de microbiologia, laboratori de qualitat i la seva pr\u00f2pia planta de processament. Gr\u00e0cies a aquest enfocament cient\u00edfic, cada etapa del proc\u00e9s es controla acuradament per a ressaltar el potencial sensorial de cada caf\u00e8. <\/p>\n<p>Per a aquest Red Bourbon s&#8217;aplica un proc\u00e9s rentat amb fermentaci\u00f3 estesa de 60 hores. Despr\u00e9s d&#8217;una estricta selecci\u00f3 i esterilitzaci\u00f3 de les cireres, el caf\u00e8 passa per una primera fase de fermentaci\u00f3 anaer\u00f2bica controlada amb microorganismes espec\u00edfics. Posteriorment, es despulpa i se sotmet a una segona fermentaci\u00f3 abans de realitzar un segellament del gra mitjan\u00e7ant xocs d&#8217;aigua freda i calenta, t\u00e8cnica que ajuda a potenciar les seves qualitats organol\u00e8ptiques.  <\/p>\n<p>El resultat \u00e9s un caf\u00e8 equilibrat i expressiu, amb un perfil afruitat en el qual destaquen notes de caramel, pr\u00e9ssec i cacau, ideal tant per a espresso com per a m\u00e8todes de filtre.<\/p>\n<h2>Proc\u00e9s<\/h2>\n<p>Aquest caf\u00e8 es processa mitjan\u00e7ant una fermentaci\u00f3 estesa rentada de 60 hores, una t\u00e8cnica utilitzada en caf\u00e8s d&#8217;especialitat per a intensificar el perfil sensorial. Durant aquest proc\u00e9s, el gra roman m\u00e9s temps en fermentaci\u00f3 que en una rentada tradicional, la qual cosa permet desenvolupar major complexitat arom\u00e0tica. Aquest m\u00e8tode requereix un control molt prec\u00eds per a evitar defectes i mantenir l&#8217;equilibri en tassa. El resultat \u00e9s un caf\u00e8 m\u00e9s expressiu, amb major acidesa c\u00edtrica i profunditat de sabor.
