The low temperatures of the high mountains allow the cherries to ripen slowly, so the bean develops an extraordinary concentration of sugars and aromatic complexity.\u003c\/p\u003e\n\u003cp\u003eThis lot is a careful combination of the native varieties 74100 and 74157, selected by the Jimma Agricultural Research Centre (JARC) for their perfect adaptation to the terroir and their outstanding cup quality. After rigorous hand-picking of only the ripest cherries, the coffee is processed using the washed method with fresh water from the Bonora river, a meticulous process that removes the mucilage to deliver a clean, vibrant and very elegant profile, where fresh notes of orange, raspberry and jasmine shine through.\u003c\/p\u003e\n\u003ch2\u003e\u003cb\u003eWashed process\u003c\/b\u003e\u003c\/h2\u003e\n\u003cp\u003eThe beans of this Ethiopian coffee, from the local varieties 74100 and 74157, are carefully hand-selected to ensure that only cherries at their optimum ripeness are used.
