The cherries are selected for their sugar content of more than 20° Brix, then soaked in water for 2 hours. The process continues with wet milling leaving 50% mucilage. After sun-drying on parabolic beds for 16 days, the coffee reaches a humidity of 10.5%. Subsequently, a final moisture stabilisation is carried out for 16 days and stored in grain-pro bags.\n\n\u0026nbsp;\n\n\u003cstrong\u003eVariety - Caturra\u003c\/strong\u003e\n\nThe Caturra variety is a natural mutation of Bourbon.
