Each cup is the result of innovation, teamwork and a deep passion for coffee. <\/p>\n<p>This coffee has been carefully roasted to bring out its exceptional espresso attributes, achieving an ideal balance between sweetness, body and acidity.<\/p>\n<p>A true gem of specialty coffee that embodies the essence of Mexico.<\/p>\n<p><strong>Process &#8211; Honey<\/strong><br \/>\nThe cherries are harvested with a sugar level above 19 Brix and soaked in water for one hour for cleaning, sorting and hydration. They are then pulped, leaving 50% of the mucilage, and dried in the sun on African beds for 18 days. Subsequently, they are stabilised in the shade in fique sacks for 4 days and stored in GrainPro bags for a further 15 days.
