It comes from the San Jos\u00e9 estate, a place where tradition and passion for coffee have been the driving force behind the growth of the Borgonovo Pohl family. <\/p>\n<p>His history in the coffee industry began in the early 20th century, when Mauricio Borgonovo arrived in El Salvador from Monza, Italy. His first experience in the sector was in a mill, where he weighed coffee and learned first-hand about its quality and processing. Soon after, he acquired the San Carlos farm, laying the foundations for what is today a company committed to excellence and sustainability.  <\/p>\n<p>Beyond being a business, Borgonovo Pohl is characterised by its strong social responsibility. Over the years, it has promoted initiatives that improve the quality of life of nearby communities, supporting local development and the well-being of those involved in coffee production. <\/p>\n<p>Each bean is carefully cultivated, precisely selected and roasted with an ideal profile for filtering methods, bringing out its unique and complex notes. The cherries are selected for their sugar content of more than 20\u00b0 Brix. The wet grinding process leaves 25% mucilage, enriching the flavour profile of the coffee. After careful drying in the sun on parabolic beds for 18-20 days, the coffee reaches an optimum humidity of 10.5%. Subsequently, a final moisture stabilisation is carried out for 12 days before being stored in grain-pro bags.<\/p>\n<p><strong>Variety &#8211; Marsellesa<\/strong><br \/>\nMarsellesa is a coffee variety originating in Brazil, known to be the result of a cross between the Bourbon and Caturra varieties. This variety is appreciated for its high resistance to diseases and its good adaptation to different types of soils. The Marseillaise bean is of superior quality, with a balanced profile that appeals to coffee growers and specialty coffee consumers.
