Many of these farms operate under principles of organic agriculture and fair trade, which allows not only responsible production, but also an improvement in the living conditions of local communities.  <\/p>\n<p>The Acevedo region has established itself as a leading specialty coffee growing area thanks to its privileged climate, ideal altitudes and fertile soils. Coffees from this area tend to offer smooth and balanced sensory profiles, with notes that vary between chocolate, ripe fruits and flowers, depending on the variety and the process. This growing national and international recognition positions Acevedo as a key origin in the new generation of Colombian coffees. The cherries are selected for their sugar content of more than 20\u00b0 Brix. The wet grinding process leaves 25% mucilage, enriching the flavour profile of the coffee. After careful drying in the sun on parabolic beds for 18-20 days, the coffee reaches an optimum humidity of 10.5%. Subsequently, a final moisture stabilisation is carried out for 12 days before being stored in grain-pro bags.<\/p>\n<p><strong>Variety &#8211; Caturra<\/strong><br \/>\nThe Caturra variety is a natural mutation of Bourbon. It stands out for its compact growth, which facilitates harvesting and crop management. This variety is highly appreciated due to its adaptation to different altitudes and climates. Its quality and flavour make it a favourite in the specialty coffee market.
