Black Honey Process

Explore the Black Honey process at the Tres Milagros farm, where excellence is the norm. The cherries, with more than 22° Brix, are soaked in water for 2 hours and pulped leaving 85% of the mucilage. Cherries undergo a meticulous sun-drying process on African beds lasting 22-24 days, carefully monitored until the humidity level reaches 10.5%. Following this, a meticulous 16-day humidity stabilization phase takes place within a warehouse. The journey concludes as the coffee is securely stored in grain-pro bags, ensuring optimal preservation and quality. Each batch is tasted, guaranteeing the quality and uniqueness of each cup.
