This speciality coffee comes from the Campo Hermoso farm in Colombia, a family farm owned by the Noreña family. Today, Edwin Noreña, a fourth-generation coffee farmer, coffee processing consultant, Q-grader and judge in Colombia’s Cup of Excellence competition, manages the cultivation and processing of the farm’s coffees.
This coffee is a clear reflection of Edwin’s passion for creating exceptional coffees through innovative fermentation processes. It combines the Bourbon Sidra coffee variety with a unique fermentation process that maximises its characteristics, resulting in a cup full of nuances and complexity.
Specially roasted for filter, this coffee is designed to enhance its profile in brewing methods such as the drip brewer or Chemex. Its clean, balanced profile delivers a smooth cup allowing the flavours to shine through with clarity and depth.

Process - Washed Fermented
The Washed Fermented process starts with the harvesting of cherries with more than 23° brix. They are then soaked in water for 2 hours and fermented anaerobically for 8 hours. The coffee is pulped, leaving 35% mucilage, and dried in the sun on African beds for 22 days to 10.5% humidity. Finally, it is stabilised for 13 days in a warehouse and stored in Grain-Pro bags before being cupped and organised into batches.

It is believed to be a natural cross between Bourbon and an Ethiopian variety, which gives it unique characteristics in its cultivation and processing. Its exclusivity and prestige have generated great interest among experts and producers, making it one of the most coveted varieties in the coffee industry.
