The fermented washing process
The washed fermentation process begins with the harvesting of cherries with more than 23° brix. They are then soaked in water for 2 hours and fermented anaerobically for 8 hours. The coffee is pulped, leaving 35% mucilage, and dried in the sun on African beds for 22 days until it reaches 10.5% humidity. Finally, it is stabilized for 13 days in a warehouse and stored in Grain-Pro bags before being cupped and organized into lots.

Six years ago, Santuario Project and Campo Hermoso joined forces to develop innovative coffee processes to enhance the flavours in each of Santuario Project’s farm origins. In 2023, a new Research and Development centre was built to research new techniques for processing coffees. It is located in Cauca, recognised as an aquatic treasure thanks to its coastal strip of mangroves, rainforest and estuaries that extend into the Pacific Ocean.
