The Honey Classic process

The cherries are harvested at over 21 degrees Brix, ensuring optimum sweetness. They are then soaked in water for an hour to remove some of the mucilage and pulped, leaving 45% of the mucilage to provide unique flavour characteristics. They are then dried in the sun on African beds for 20 to 22 days until they reach a humidity of 10.5%. Subsequently, they are moisture stabilised in a warehouse for 16 days and stored in GrainPro bags. Finally, after stabilisation, the coffees are cupped and batches are organised, ensuring the quality and distinctive profile of each.
