The Las Brisas estate is situated in a coffee-growing region with a long-standing tradition, at a high altitude where the climate and constant breeze encourage the coffee cherries to ripen slowly. Its owner, Hugo Núñez, acquired the estate in 2012 and has since been committed to careful and sustainable production, respecting natural ecosystems and protecting local water sources and flora.
On the estate, the coffee trees grow under the natural shade provided by native forest species, fruit trees and musaceae, which helps to maintain biodiversity and improve the quality of the crop. Harvesting is carried out by hand, selecting only the cherries at their peak of ripeness to ensure the highest quality in the cup.
La región donde se ubica la finca forma parte de una importante zona productora de café arábica, donde miles de familias caficultoras cultivan variedades tradicionales como Caturra o Catuaí. En este contexto, productores comprometidos con la calidad, como en Las Brisas, trabajan constantemente en mejorar sus procesos y experimentar con nuevas técnicas para obtener cafés más complejos y expresivos.
The result is a balanced, sweet coffee with a fruity profile featuring notes of cocoa, honey, red berries and plum, accompanied by a mellow acidity and a creamy body that works very well in both espresso and filter coffee.
Process - Natural
Discover the natural process that takes cherries to new heights of quality. From the meticulous harvesting of cherries with more than 22º brix to the soaking in water for 4 hours, every step is taken care of. The coffee, sun-dried on African beds for 23 days to 10.5% humidity, reveals its true character. After 12 days of final stabilisation in a warehouse, each grain is stored in grain-pro bags to preserve its excellence. Finally, the batches are tasted with precision, guaranteeing a sublime experience with every sip.
