More about this coffee from Ethiopia

Gedeb is one of the districts, also called woredas, in the Gedeo zone, with Kochere woreda to the west, Yirgacheffe woreda to the north-west, Bule woreda to the north, and the Oromia region to the south and east. The nearby Yirgacheffe woreda gives its name to this coffee-growing region.

Literally translated as ‘Land of Many Springs,’ Yirgacheffe has the ideal topography, altitude, and water sources for producing and processing exceptional coffees. This region is located within Ethiopia’s Southern Nations, Nationalities, and Peoples’ Region (SNNPR), which is home to 45 distinct ethnic groups. Coffee farmers in Yirgacheffe are typically smallholders who have owned their land for several generations, sometimes cultivating only a few hectares. Most Yirgacheffe coffees are sold as cherries to centralised washing stations, which help to better separate flavour profiles.

Many consider Yirgacheffe to be the birthplace of coffee, and the region’s coffee trees are a natural blend of native varieties grown among other species in coffee plantations and forests.

Process - Honey

Instead of being fermented and washed, the beans with mucilage are transferred directly to raised drying beds. The beans are spread out in thin layers and stirred regularly to prevent unwanted fermentation and promote even drying. This initial phase allows the moisture to decrease in a controlled manner, fixing the sugars from the mucilage in the bean structure. Over 12 to 18 days, the layers gradually thicken and the mucilage darkens and caramelises slightly, intensifying the aromatic complexity.

The coffee beans are carefully selected to ensure only the ripest cherries are used. Once harvested, the cherries are mechanically pulped to separate the bean from the pulp, leaving part of the mucilage—the sticky layer rich in natural sugars—attached, which will be essential for the development of the coffee’s sensory profile.

Most producers are small farmers who grow coffee alongside subsistence crops. These farms often implement sustainable farming practices and artisanal processing methods.
