This specialty coffee bean comes from Finca San Carlos, Mauricio Borgonovo’s first acquisition in 1950, where he started the Borgonovo Pohl project after several years as a weigher in a coffee mill.
Borgonovo Pohl is a third generation family business dedicated to processing and exporting high quality coffee in El Salvador. With over 50 years of experience, the new generation proudly continues the tradition of commitment to quality, while also focusing on social and environmental sustainability.
Beyond being a business, Borgonovo Pohl is characterised by its strong social responsibility. Over the years, it has promoted initiatives that improve the quality of life of nearby communities, supporting local development and the well-being of those involved in coffee production.
Each bean is carefully cultivated, carefully selected and roasted to achieve an ideal espresso profile, which brings out its robust character and unique notes. Process - Washed
Immerse yourself in the coffee Classic Whased process, where each stage is executed with precision to ensure quality. The cherries are selected for their sugar content of more than 20° Brix. The wet grinding process leaves 25% mucilage, enriching the flavour profile of the coffee. After careful drying in the sun on parabolic beds for 18-20 days, the coffee reaches an optimum humidity of 10.5%. Subsequently, a final moisture stabilisation is carried out for 12 days before being stored in grain-pro bags.
Variety - Marsellesa
Marseillaise is a coffee variety originating in Brazil, known to be the result of a cross between the Bourbon and Caturra varieties. This variety is appreciated for its high resistance to diseases and its good adaptation to different types of soils. The Marseillaise bean is of superior quality, with a balanced profile that appeals to coffee growers and specialty coffee consumers. Furthermore, Marseillaise is recognised for its excellent adaptability to different climatic conditions.
