This specialty coffee originates from the Santuario farm in Colombia, founded in 2000 by Camilo Merizalde, a pioneer in the world of specialty coffee. In just a decade, the Santuario farm has positioned itself as an international benchmark, standing out for its innovation and the creation of unique, high quality coffees.

Process - Cherry Madness
Explore the exciting Cherry Madness process, where quality reaches new heights. The cherries, with more than 24° Brix, are soaked in water for 4 hours before a 69-hour anaerobic fermentation with Coffee-Mossto. After wet milling with 50% mucilage, a further 42-hour fermentation with Coffee-Mossto takes place. The pergamino is dried in the sun on African beds for 22 days to 10.5% moisture content. Final stabilisation for 16 days in a warehouse ensures perfection before storage.
