Cherry Madness process
Explore the exciting Cherry Madness process, where quality reaches new heights. The cherries, with more than 24° Brix, are soaked in water for 4 hours before a 69-hour anaerobic fermentation with Coffee-Mossto. After wet milling with 50% mucilage, a further 42-hour fermentation with Coffee-Mossto takes place. The pergamino is dried in the sun on African beds for 22 days to 10.5% moisture content. Final stabilisation for 16 days in a warehouse ensures perfection before storage.
Santuario Farm, Colombia
The Santuario Farm was established in 2000, when Camilo Merizalde had the vision to create a truly unique farm capable of producing the most unique coffees in Colombia. It is located in the Department of Cauca, with a unique climate for the production of speciality coffees. This area is known for its coffee-growing tradition, where more than 90,000 families produce some of the best coffee in the world. The Santuario farm has been producing excellent quality coffees for 20 years.
