More about this Brazilian coffee
Sourced from the Longitude estate in the Paraná region of Brazil, this batch from producer Jose Rezende is an explosion of chocolate in every cup: rich, sweet and with that intense body that characterises the finest naturally processed Brazilian coffees.
Grown at 800 metres above sea level, the Longitude estate cultivates the Mundo Novo variety, a classic Brazilian coffee known for its vigour, high productivity and, above all, its ability to express deep, chocolatey profiles when processed using the natural method. It is precisely this process that defines the character of this coffee: the cherries are dried whole, allowing the bean to absorb all the fruit’s sweetness and develop those notes of dark chocolate, caramel and raisins that define it.
With an SCA score of 84.50, a perfectly clean cup and maximum sweetness in the sensory analysis, Cacao Bomb stands out for its balance and well-rounded character. Low acidity, intense body and an aftertaste that invites you to linger a little longer. It is specially designed for espresso and latte, where its chocolatey profile shines through beautifully, whether on its own or combined with milk.
An authentic and generous expression of Brazilian speciality coffee.
Process - Natural
At the Longitude estate, the natural process is much more than just a technique: it is a conscious decision to let the fruit speak for itself. Once the cherries have been harvested at their peak of ripeness, they are spread out whole in the sun to dry slowly, without the bean coming into contact with water. Over the course of weeks, the bean absorbs the sugars and aromas from the pulp surrounding it, developing that characteristic density and sweetness that make this coffee so distinctive.
The result is a coffee with low acidity and a full body, where notes of chocolate and caramel blend with a hint of raisin that rounds off every sip. It is a process that demands patience, precision and expertise, but when executed well, as it is here, it produces some of the most expressive and memorable coffees Brazil has to offer.
Varietal - Mundo novo
Mundo Novo is one of the most iconic varieties of Brazilian coffee and one of the reasons why Brazil has established itself as a global coffee powerhouse. Having emerged naturally as a cross between Typica and Bourbon, this variety combines the best of both worlds: the aromatic elegance and sweetness of its parent varieties, coupled with a hardiness and productivity that make it ideal for the conditions found across Brazil.
Its robust character and remarkable adaptability have made it a trusted choice for producers such as Jose Rezende, who seek consistency from harvest to harvest without compromising on cup quality. In the case of this Brazilian coffee, Mundo Novo expresses its full potential through the natural process, revealing a deep, chocolatey profile with a natural sweetness that needs no added sweeteners. A classic that, decades later, remains one of the greats of the speciality coffee world.
