Classic Washed

Washed process

Immerse yourself in the classic coffee Classic Washed process, where each stage is executed with precision to ensure exceptional quality. Cherries are harvested above 21º brix’s. They are then soaked in water for 2 hours and ground to leave 50% mucilage. This is followed by aerobic fermentation for 8 hours, sun-drying the Pergamino on African beds for 22 days until the humidity is 10.5%, and final moisture stabilisation for 16 days in a warehouse.

At the end of 2017, Santuario established itself in Mexico with the creation of the Ixhuatlan Innovation Centre in Veracruz. Today we have 120 farmers involved in the Sanctuary programme in Mexico. We have been providing technical and quality advice in order to maintain a solid base of producers supplying good quality coffees.
