Through a comprehensive approach that includes technical advice and quality control, Santuario has succeeded in creating a community of producers committed to excellence, raising the quality of Mexican coffee while boosting the socio-economic development of local communities.
The Santuario project in Mexico has resulted in coffees with unique flavour profiles, reflecting the richness of Mexican soils and the dedication of its producers. Each cup is a sample of the teamwork and innovation behind this project.
This coffee has been meticulously roasted to bring out its exceptional espresso qualities, achieving a perfect balance between sweetness, body and acidity.

Process - Classic Washed
Immerse yourself in the classic coffee Washed process, where each stage is executed with precision to ensure exceptional quality. Cherries are harvested above 21º brix’s. They are then soaked in water for 2 hours and ground to leave 50% mucilage. This is followed by aerobic fermentation for 8 hours, sun-drying on African beds for 22 days until the moisture content is 10.5% and final moisture stabilisation.
Variety - Marsellesa
Marseillaise is a coffee variety originating in Brazil, known to be the result of a cross between the Bourbon and Caturra varieties. This variety is appreciated for its high resistance to diseases and its good adaptation to different types of soils. The Marseillaise bean is of superior quality, with a balanced profile that appeals to coffee growers and specialty coffee consumers. Furthermore, Marseillaise is recognised for its excellent adaptability to different climatic conditions.
