Specialty coffee passes strict quality controls, which guarantee its incomparable flavor. The process that gives rise to this type of coffee is known as traceability. That is, the history of each bean: from its origin, variety, harvesting, the humidity it was exposed to, and cultivation, among other factors.
Farmers are of great value in the coffee journey, as many phases of cultivation depend on them. They choose a specific variety of coffee to grow in a specific region previously selected for its temperature, shade, humidity, and altitude. All these factors will result in a unique production.
