More about this coffee from El Salvador

Las Brisas farm is located in a deeply traditional coffee-growing area at a high altitude, where climatic conditions and a constant breeze favor the slow ripening of coffee cherries. Its producer, Carlos Pola, is committed to careful and sustainable production, respecting natural ecosystems and protecting local water sources and flora.

On the farm, coffee trees grow under natural shade provided by native forest species, fruit trees, and banana plants, which helps maintain biodiversity and improve crop quality. Harvesting is done manually, selecting only the cherries at their optimal point of ripeness to ensure higher cup quality.

The region where the farm is located is part of an important Arabica coffee-producing area, where thousands of coffee-farming families grow traditional varieties such as Caturra or Catuaí. In this context, producers committed to quality, as at Las Brisas, work constantly to improve their processes and experiment with new techniques to obtain more complex and expressive coffees.

The result is a balanced and sweet coffee with a fruity profile featuring notes of cocoa, honey, red fruits, and plum, accompanied by a honeyed acidity and a creamy body that works very well in both espresso and filter preparations.
Coffee processing
The process

Natural

Discover the natural process that elevates cherries to new heights of quality. From the meticulous harvesting of cherries with over 22º Brix to the 4-hour water soak, every step is carefully managed. The coffee, sun-dried on African beds for 23 days until reaching 10.5% moisture, reveals its true character. After 12 days of final stabilization in a warehouse, each bean is stored in GrainPro bags to preserve its excellence. Finally, the lots are precisely cupped, guaranteeing a sublime experience in every sip.
Specialty coffee beans
The variety

Bourbon Rainbow

Bourbon Rainbow is a special selection within the Bourbon family that groups different expressions of this variety, known for their distinct cherry colors, such as red, yellow, or pink Bourbon. This diversity provides complex and highly aromatic sensory profiles in the cup. Coffees from this family typically stand out for their natural sweetness, good acidity, and balanced texture. Thanks to its genetic richness, Bourbon Rainbow offers vibrant and fruity profiles that make it a highly prized variety in specialty coffee.
