This green coffee comes from the slopes of the Tacaná Volcano in Soconusco, Chiapas, where small-scale farmers in communities such as Las Delicias, Agua Caliente, Chanjalé, and Pavencul cultivate their plots with deep respect for the land. With farms no larger than 1.5 hectares, worked under shade and in harmony with the natural cycles of the soil, these producers have built a way of growing coffee that prioritizes sustainability and collective effort above all else.

The Tacaná Suprema lot is the result of that shared endeavor. The volcanic soils, the altitude between 1,600 and 2,000 meters, and the region's humid tropical climate create the perfect conditions for a coffee with balanced body, bright acidity, and a clean, expressive profile. The gentle washed process, with natural sun and wind drying, preserves the purity of the bean and enhances its finest nuances.

This specialty green coffee has been selected as part of a fair trade project that provides visibility and real value to the region’s coffee growers, fostering rural permanence and local economic development through a traceable and transparent chain.

The process

Wash

Discover the natural process that elevates cherries to new heights of quality. From the meticulous harvesting of cherries with over 22º Brix to the 4-hour water soak, every step is carefully managed. The coffee, sun-dried on African beds for 23 days until reaching 10.5% moisture, reveals its true character. After 12 days of final stabilization in a warehouse, each bean is stored in GrainPro bags to preserve its excellence. Finally, the lots are precisely cupped, guaranteeing a sublime experience in every sip.

Bourbon, Typica, Caturra, and Catimor

The Bourbon, Typica, Caturra, and Catimor varieties that make up the Tacaná Suprema lot represent the living history of Mexican coffee. Bourbon and Typica are two of the oldest and most highly regarded varieties in the Arabica world, recognized for their aromatic complexity, natural sweetness, and elegant acidity that have made them benchmarks of specialty coffee. Caturra provides body and higher productivity without losing expressiveness in the cup, while Catimor adds resistance and adaptability to the conditions of the volcanic terrain.

The combination of these four varieties in a regional blend is no accident: it is a reflection of the accumulated knowledge of generations of farmers who have learned to work with the best that each plant has to offer. The result is a balanced coffee, with layers of flavor ranging from chocolate and nuts to a bright citrus touch, supported by a medium body and a clean structure that invites you to keep exploring the cup.
