More about this coffee from Ethiopia

Nestled in the Bensa district, within the iconic Sidama zone, lies the Ayla washing station, surrounded by the towering Bombe mountains. In this privileged setting, at an altitude of approximately 2,000 meters, hundreds of smallholder farming families cultivate their coffee trees on traditional micro-plots. The low temperatures of the high mountains promote a slow maturation of the cherries, allowing the bean to develop an extraordinary concentration of sugars and aromatic complexity.

This lot is composed of a careful combination of the indigenous 74100 and 74158 varieties, selected by the Jimma Agricultural Research Center (JARC) for their perfect adaptation to the terroir and outstanding cup quality. Following a rigorous hand-picking of the ripest cherries, the coffee is processed using the washed method with fresh water from the Bonora River, a meticulous process that removes the mucilage to offer a clean, vibrant, and highly elegant profile, where fresh notes of orange, raspberry, and jasmine shine through.

The process

Washed

The cherries of the indigenous 74100 and 74158 varieties are hand-picked, selecting only those at their optimal point of ripeness. They are then mechanically depulped and fermented in water to completely remove the mucilage, and finally washed with fresh water from the Bonora River. This meticulous washing preserves the citric acidity and floral fragrance of the 74100 and the fruity complexity and creamy body of the 74158, resulting in a clean and elegant cup with notes of orange, raspberry, and jasmine.

The variety

74100 and 74158

The 74100 variety provides exceptional elegance in the cup, characterized by a bright citric acidity and a distinct floral fragrance of jasmine and bergamot, accompanied by subtle notes of stone fruit. For its part, the 74158 variety complements the profile by adding fruity complexity and a creamy body with an enveloping texture, in which juicy nuances of red berries and a sweet, lingering finish stand out.
