The Specialty Coffee Association is an organization dedicated to educating about coffee and supporting activities that make coffee a more sustainable, equitable, and prosperous activity for the entire value chain. It developed a scoring system based on categories that evaluate the quality of coffee. These are: aroma, flavor, aftertaste, acidity, body, balance, and overall score.
As we have seen, a coffee can only be called "specialty" if it passes the tasting criteria performed by an SCA-certified professional. In addition, the score must be above 80. Therefore, meeting these quality requirements is not easy, and that is why only 5% of the coffee produced worldwide falls into this category.
