Discover the Santuario Sul farm in Brazil

Cafetales de la finca Santuario Sul en Brasil

In the world of specialty coffee, there are places that transcend simple bean production and become true gems of the coffee industry. One such treasure is Finca Santuario Sul in Brazil, a corner where passion and innovation merge to create truly exceptional coffee experiences. At Sensorial Coffee Roasters, we have previously worked with coffees from this farm, and that is why we want to tell you its story.

History of Finca Santuario Sul

Five years ago, Finca Santuario Sul was born, conceived under the same philosophy and techniques that brought Finca Santuario in Cauca, Colombia, to life. Luiz Paulo Pereira Filho and Camilo Merizalde joined forces to plant the Yellow Bourbon variety as the farm's centerpiece. In the following years, the farm became a coffee garden with 20 different species from all over the world. Every year, Finca Santuario Sul surprises with innovative processes that enhance the flavors of the exotic coffees grown in its fields. The Santuario project is in charge of coffee processing at the farm. Each season, Mr. Ivan Solis and Mr. Edwin Noreña, who are in charge of quality, travel to Brazil to personally oversee the harvesting and coffee processing operations at Santuario Sul.

The Charm of the natural process

The natural process at Finca Santuario Sul is a choreography of precise steps that result in a coffee of extraordinary quality. It begins with a selective harvest, where only cherries with brix sugar levels between 20 and 22 degrees are hand-picked. The cherries are meticulously washed with clean water, and the floaters are separated. Then, the cherries are submerged in water for two days, allowing the flavors to mature.

Finally, the final drying stage takes place on African beds for 22 days, under carefully controlled conditions. The moisture is reduced to 10.5%, and to stabilize it, the coffee rests for 4 days in bags, allowing the flavors to concentrate and fully develop.

Finca Santuario Sul in Brazil is a testament to how a passion for coffee can lead to the creation of unique treasures. Each cup we have served with beans from this farm has been an invitation to explore the exotic flavors and innovative techniques that intertwine to offer a coffee that transcends the conventional.
